Ingredients:
1 head of green cabbage, cut into 1-inch slices
1 pound of lean ground beef
1/2 cup tomato sauce (or ketchup)
1/2 cup shredded cheese (mozzarella, Monterey Jack), divided
1/2 teaspoon salt and black pepper
1/2 teaspoon red chili pepper flakes
1 teaspoon grated garlic
1/2 cup chopped green onion
1/2 cup chopped parsley
Directions:
Preheat your oven to 400ºF (200ºC). Arrange the cabbage slices on a rimmed sheet pan. Brush a little oil on the cabbage slices and season with salt and pepper.
Roast the cabbage slices in the oven for about 10 minutes so they get precooked – giving you a headstart to avoid overcooking the beef patties afterward.
In the meantime: In a large bowl, combine the lean ground beef with garlic, green onion, parsley, red chili pepper flakes, and half the cheese, salt, and pepper. Divide the mixture into four beef patties.
Remove cabbage from the oven, then spread a tablespoon of tomato sauce on top. Add a sprinkle of shredded cheese, then top with a beef pattie. Finally, sprinkle another layer of shredded cheese.
Bake the cabbage beef burgers in the oven for 10-12 minutes or until the burgers are done to your liking and the cheese is melted and bubbly. Sprinkle the baked cabbage burgers with fresh herbs and serve immediately.
