Ingredients:

– 1 cup (240 milliliters) diced ham (or turkey bacon, sausage, or your preferred alternative)
– 2 cups fresh spinach, roughly chopped
– 6 large eggs
Instructions:
1. **Preheat Oven:** Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with butter or non-stick cooking spray.
2. **Prepare Hash Brown Crust:**
– In a large bowl, combine the thawed hash browns, egg whites, melted butter, salt, and pepper.
– Mix until well combined.
– Press about 2 tablespoons of the hash brown mixture into the bottom and up the sides of each muffin cup to form a nest.
